Chocolate and coconut compliment each other so well. My siblings are very picky and only like simple dessert. These coconut cake squares are easy to make and a delicious (and my siblings will actually eat them). This recipe makes A LOT of squares, and it can serve 10 people. I make this when I am having large group gatherings or work potlucks.
Ingredients
- 3 eggs
- 3 cups milk
- 3 cups oil
- 6 cups sugar
- 9 cups flour
- 1 baking powder
- a little grated lemon peel
- 400 ml of milk
- 15 tablespoons sugar
- 4 tablespoons cocoa
- 250g margarine
- 200 g coconut
Instructions:
- Preheat oven to 325.
- Whisk the eggs and sugar together, then add milk, oil, flour, baking powder and grated lemon peel.
- Grease the pan, pour into a pan.
- Bake for 20-25 minutes, or until a toothpick inserted in center comes out clean.
- Let pan cool on a cooling rack.
- Using a knife around the inside of the pans to loosen the cake from the pan.
- Remove the cake from the pan and let them cool.
- In a large saucepan, mix together milk, sugar and cocoa powder. Set on the stove and stir, when it boils add the butter and cook until the butter is melted.
- Remove of the stove and let it cool for 2 minutes
- The cake cut into squares and using a fork dip each cake in the filling and roll in coconut
