Every time we have a gathering (or make pasta) my family and friends request bruschetta. I have made variations of it, but the basics are always a hit on their own. Topping it off with parmesan cheese is always also a great idea.
What you will need:
2 -3 medium tomato’s, chopped
1/2 red onion, chopped
2 table spoons chopped basil leaves
2 cloves garlic, chopped
1/2 teaspoon cracked black pepper
2 tablespoons red wine vinegar
3 tablespoons olive oil
Green onions
Garlic Texas toast (use Parmesan toast instead if you don't want a lot of garlic)
How to make it:
Combine the oil, vinegar, garlic, tomatoes, black pepper, basil leaves in a small bowl. mix and let the mixture sit for 10-15 minutes
Lightly oil the grill rack and heat to medium
Grill the toast slices for two-three minutes (flipping them mid time), until they are browned
Top with mixture and serve immediately.
