This easy grilled recipe takes 30 - 45 minutes to make and is a delicious, healthy family dinner plus it is great for meal-prep. Easy, healthy and totally delicious with a simple marinade to give the beef and vegetables a big boost of delicious flavor.
This recipe works as well on an outdoor grill but you could do it in a pan too. Be sure to pre-heat the grill well to get a good sear on the beef and vegetables without overcooking them.
What you need:
Beef of choice, we used sirloin
Bell peppers
Asparagus
Zucchini
Corn
Sweet Potatoes
Red Onion
Mushrooms
For the marinade:
1 tsp Black pepper
1 tsp Paprika, smoked
1 tsp Salt
1 tsp Chili flakes
4 Garlic cloves
1 tsp Oregano, dried
1/4 cup Olive oil
3 table spoons soya sauce
2 table spoons honey
How to make it:
Blanch (soften) the sweet potatoes (I put them on boiling hot water for about 10-15 min).
Cut all vegetables and meat. I cut the variables in medium size pieces to the fit on the skewers.
Season the meat with salt and pepper to taste.
In a bowl mix all the ingredients for the marinade. Divide marinade into two, and toss the veggies in one and meat in the other half.
Assemble your skewers. Beef and asparagus together and other vegies on another.
Grill the veggies for about 15-17 minutes, turning every few minutes.
Grill the meat for about 12-15 minutes, turning every few minutes.
